Consumer interest has mainly focused on food quality and safety, due to direct impact these two aspects have on health. European legislation identi- fies specific markers that allow monitoring the healthiness of the food. The indicator analyzes, which are specific to the product and/or process, are car- ried out using analytical methods, which are often expensive, employ spe- cialized operators and a long time to obtain the results. Food analysis contin- uously requires the development of more robust, efficient, sensitive and eco- nomically analytical methods to ensure the safety, quality and traceability of food in compliance with legislation and consumer demands. The aim of re- search is the development of specific chemical sensors capable of investigat- ing food quality and safety using product and/or process markers. The devel- opment of a system (sensor/data analysis) allows the rapid identification of more specific analytes of food, also providing a characteristic profile of the food product and the possibility to assess their quality and health quickly.
