Abstract

Caffeine is a natural alkaloid exerting many physiological effects, widely distributed in plant products and beverages and its quantification is mainly of pharmaceutical and alimentary concern. Quantitative methods are generally more expensive, time-consuming and complicated than electroanalytical ones but the electrochemical determination of caffeine is not so suitable because of its high oxidation potential at the most common electrode materials. A method based on the modification of a gold electrode (Au) surface by deposition of functionalized gold nanoparticles is described. The best performances were observed at Au electrode modified with colloidal gold nanoparticles (AuNPs) stabilized into a chitosan matrix Analytical parameters such as reproducibility, interference rejection, response time, storage and operational stability of the caffeine sensor have been investigated.
