Chromatographic analysis has been used to separate threelipid fraction of milk: non polar lipids, glycolipids and phospholipids. Each of them was analysed by thin-layer chromatography and gas chromatography. Most of the components of the three fraction have been identified; the amounts of the different fatty acids were measured by means of gas chromatographic analysis of the various fractions.
