Deep Eutectic Solvents (DES) are promising eco-friendly solvents for many applications. They can be defined as low-freezing mixtures formed by a hydrogen bond donor (HBD) and a hydrogen bond acceptor (HBA). Choline Chloride (ChCl) based DESs have attracted great interest owing their non-toxicity and low cost. Only recently, water mixtures with choline chloride (ChCl) were introduced as a new eco-friendly media, with DES features. Herein, water acts as an active and genuine component, thus leading to water-based DES (WB-DES). In this context, mixtures of ChCl and water (ChCl:W), with different water:ChCl molar ratios (n), were developed and were characterized in terms of chemical-physical properties and structural organization.
