This article reconstructs the history of a particular ingredient, verjuice, form its first exclusively pharmaceutical uses in Greek and Roman context, up to its entrance into the Arabic culinary tradition, and the following passage into the gastronomic European renaissance of the Middle Ages. In tracing the route of this ingredient, the article provides a wide survey of the history of Arabic culinary culture of the classical era, and its interactions with the traditions of Latin West.
