This work presents an experimental investigation on the growth rate of dextrose monohydrate crystals in aqueous solutions, with polysaccharides as impurity in the range 0.6-20.0%. Two different experimental procedures were applied: the monitoring of crystals in a growth cell and the batch seeded crystallization in mass. Firstly, from the visual observation of the crystal growth it was emphasized an unusual initial crystal growth, then this phenomenon was used to interpret the results obtained from the batch seeded experiments. It was shown that the kinetic coefficient is greatly affected by both the surface repair of the crystals and the presence of impurities.
