Recently the use of liquid and supercritical fluids, in particular supercritical CO2 has attracted much interest as environmentally benign solvents in different areas of applied biotechnology, e.g. to prolong storage time preventing microbial contamination in foods, to synthesise polymers, to improve protein stability at high temperature and to affect enzyme activity and selectivity.
