Three partial benzyl esters of gellan have been studied by means of CD spectroscopy in aq. Me4NCl soln. and in the gel state (aq. NaCl). Thermal stability of the soln. ordered chain states as well as of the gels, maximal in the case of gellan, markedly decreases with increasing degree of esterification.
