New analytical inspection strategies, based on hyperspectral imaging (HSI) in the VIS-NIR and NIR wavelength ranges (400-1000 and 1000-1700 nm, respectively), have been investigated and set up in order to perform a characterization of Italian and Spanish hams. The research was developed inside a bilateral agreement in the framework of an Italian-Spain Integrated Actions Research Project: “Hyperspectral and Chemical Speciation Techniques. Valorisation of these Techniques for the Characterization and Classification of Food”. Main aim of the project is to perform a comparison between Italian and Spanish hams and to verify the possibility to define innovative quality control-inspection logics to perform their characterization.
