In situ labeling of all labile H groups (aliph. and phenolic hydroxyls and carboxylic acids) with a phosphorus-​contg. reagent (Cl-​TMDP) followed by quant. 31P NMR acquisition constitutes a novel fast and reliable anal. tool for the anal. of tannins and proanthocyanidins with significant implications for the fields of food and feed analyses, tannery, and the development of natural polyphenolics contg. products.
