The constant archaeological activity conducted in the context of the medieval city of Leopoli - Cencelle (VT), by the Chair of Christian and Medieval Archaeology of the 'Sapienza' University of Rome has led to the investigation of multiple aspects related to the life of the city and its connections with the surrounding territory of the Mignone Valley. In particular, the contribution presented here proposes a reconstructive analysis of the use of ancient soils in the long chronological period between the 10th and 14th centuries in the upper Latium territory lapped by the river Mignone, also in the light of new data from landscape studies and food archaeology research. Thanks to the study of the ancient landscape and the information from the functional approach applied to the study of the vessels, the use of written sources relating to the cooking and the analyses made on the organic remains of the uncovered pottery of Cencelle, we will be able to compare different but at the same time strongly complementary methodologies. The aim is to understand the type of land use, food production, cooking and consumption, capturing changes and evolutions over time, within the complex reality of the town.
