Il necessario invisibile. Impastare, miscelare, cuocere e conservare: il ruolo delle ceramiche degli Horti Lamiani

The paper examines some of the data collected during the research directed by SSABAP Rome at the south-eastern corner of Piazza Vittorio Emanuele II, in the Esquilino district, and connected to the renovation of the new headquarter of the ENPAM Foundation (National Insurance and Assistance Agency for Doctors and Dentists). After a brief presentation of the investigations and a quick examination of the documented settlement sequence some contexts of materials, studied in collaboration with the Department of Ancient World Studies of Sapienza - University of Rome, will be examined in detail. On the basis of these assemblages, belonging to the period between the 1st c. BCE and the beginning of the 4th c. CE, it has been possible to update the general knowledge on customs related to the preparation, cooking and preservation of food over the period considered.
