On six different commercial quinoa seeds was identified the phenolic profile by means of UHPLC-ESI-MS/MS. The samples were grinded and subjected to ultrasounds extractions. The MS analyses allowed the identification of 15 bioactive compounds with interesting renewed biological activities.
