This essay examines an Italian case of food patrimonialisation, that of the Rascino lentil in the Lazio region of the Central Apennines, as a case study to reflect on the re-signification of marginal places and the new forms of valorisation of agricultural production, of the rural dimension and of local knowledge in relation to communities. We are in a geographical region which in the 1960s and 1970s was heavily depopulated towards the capital (Rome). Here, the field research (observation, participation in the cultivation phases, interviews and sharing of the results), conducted between 2015 and 2017, has permitted us to explore the patrimonialisation process that has taken place over the years, the groups that have been involved and that have been formed, the role played by traditional knowledge and the importance that the emergence of the notion of "cultivated biodiversity" has had in the process.
