Il cuoco di Baghdad. Un antichissimo ricettario arabo

This volume includes a complete translation from Arabic into Italian of the work Kitāb al-tabīkh, by Muḥammad b. al-Ḥasan b. Muḥammad b. al-Karīm al-Kātib al-Baghdādī, from the edition prepared by D. Chelebi (Mosul, Umm al-rabī‘īn, 1934) on the basis of a manuscript from the Aya Sofia Library (Istanbul), at present stored in the Suleymaniye Library (Istanbul). Here, Chelebi’s edition is corrected and updated on the basis of recent scholarship. Al-Baghdādī’s text is particularly relevant, as it represents one of the oldest samples of the Arabic culinary tradition, which was revolutionised during the Abbasid period. The volume includes a cultural-historical introduction, a note on the history of the text and the issues related to its translation, and a Glossary on technical terms.

Questo volume contiene la traduzione dall’arabo, integrale e annotata, del testo di Muḥammad b. al-Ḥasan b. Muḥammad b. al-Karīm al-Kātib al-Baghdādī, Kitāb al-tabīkh, secondo l’edizione curata da D. Chelebi (Mosul, Umm al-rabī‘īn, 1934) di un manoscritto scoperto nella biblioteca della moschea di Aya Sofia, ad Istanbul, ed oggi conservato presso la Biblioteca Suleymaniye. L’edizione viene qui corretta ed aggiornata sulla base di studi più recenti. Il testo di al-Baghdādī è particolarmente importante perché costituisce uno degli esempi più antichi della tradizione culinaria araba che fu rivoluzionata nei secoli d’oro del califfato abbaside. Il volume include una introduzione storico-culturale, una Nota testuale, che dà conto della storia del testo e di alcuni specifici problemi legati alla traduzione, ed un Glossario relativo alla terminologia tecnica.
