Artichoke’s cultivation in Italy has ancient roots, confused by myth and legend. The great variety of species that can be found in the different regional contexts gives Italy a world record without equal, which is associated with that on the quantities produced and consumed. Local variations that accompany the artichoke, the name by which it is called in the festivals dedicated to it, are further cause of cultural richness. Italy has also contributed to the spread of the artichoke in the world, first in Europe, then, through international migration, in the various countries of destination. In addition, artichoke is suitable for many industrial processes, involving large and small companies. There are many artistic and literary works inspired by this vegetable with particular forms, that Pablo Neruda, in an ode dedicated to it, called "a warrior with a tender heart".
La coltivazione del carciofo in Italia ha radici antichissime, confuse nel mito e nella leggenda. La grande varietà di specie che si riscontra nei diversi contesti regionali conferisce al nostro paese un primato mondiale senza eguali, che si associa a quello sulle quantità prodotte e consumate. Le declinazioni locali che accompagnano il carciofo, dal nome con cui viene chiamato alle feste ad esso dedicate, costituiscono ulteriore motivo di ricchezza culturale. L’Italia ha contribuito anche alla diffusione del carciofo nel mondo, dapprima in Europa, poi, attraverso le migrazioni internazionali, nei diversi paesi di approdo. Inoltre, il carciofo si presta a numerose lavorazioni industriali, che coinvolgono piccole e grandi aziende. Tante sono le opere artistiche e letterarie ispirate a quest’ortaggio dalle forme particolari, che Pablo Neruda, in un’ode ad esso dedicata, definì “un guerriero dal cuore tenero”.
