The increasing demand for natural compounds has stimulated the search for new extraction methods capable of increasing the extraction efficiency while preserving the activity of the extracts. The use of cellulases is considered as one of the most promising technologies for these purposes. Compared to conventional solvent extraction, cellulase-assisted extraction requires lower extraction times and reduces solvent consumption. Furthermore, by proper selection of process conditions, high extraction efficiency and product quality can be achieved. In this chapter, after an examination of some important bioactive compounds, the basic principles of enzymatic cell wall degradation will be presented. Then, the main steps involved in the development of a cellulase-assisted extraction process will be described, with special emphasis on the selection of processing conditions. Finally, the advantages and limitations of this technology will be discussed and some applications will be presented.

Abstract
Finally, the advantages and limitations of this technology will be discussed and some applications will be presented.File | Dimensione | Formato | |
