In the present article, the basic chemometric classification techniques used in Foodomics are reviewed and discussed. A distinction is made between discriminant and modeling approaches, the former focusing on identifying dissimilarities among categories while the latter defining (usually) bound class spaces based on the similarities among individuals from the same group. Each method is described together with a practical exemplification of its use.
