(3) Short abstract (overall message) The aim of this paper is to demonstrate the existence of an ideal continuum between quality foods characterizing specific local realities, the traditional eating habits and diets associated with them, and culinary tourism. I’ll try to demonstrate how the existence of this continuum can lead to innovative forms of development in traditionally marginal areas with reference to some case studies in the Italian Adriatic regions, and how it provides opportunities to different territories with similar characteristics also in other geographical contexts.
