the aim of this research is to identify the impact of the economic crisis on the organic market and consumer's behavior, and consequently - its influence on the development of organic farming. For achieving these goals, has been analyzed the market of organic production and conventional production, will be used the analysis of statistical data (Istat, Eurostat). Analysis the information, based on the market trends, is necessary to use in strategic decisionmaking process for rural enterprises. The first part of the research is devoted to the consumer engagement and organic market investigation in the current crisis conditions. The second part will explore adaptation and using the obtained information for the rural enterprises (microlevel). The research is based on a multidisciplinary approach, i.e. combines aspects of marketing,management, economics and sociology and combines empirical and conceptual approaches. Research area - is Italy as an example of a European country with an continuously developing organic production and market, despite of the economic downturn. The paper ends with discussions, conclusions about the likelihoods and future prospects of the rural enterprises, development and maintain a sufficient level of economic sustainability.

Abstract
